Cut Brooklyn

Joel Bukiewicz loves grinding steel. He's the man behind Cut Brooklyn, making high-end knives to order for chefs and home cooks. Bukiewicz found that honing metal was more satisfying than honing his novel, but as with many writers and their characters, Bukiewicz remembers details about every knife hes made. The video takes you through the knife-making process and addresses common questions, like how many knives do you need, whats up with Santokus, and what is the best knife to own.

Bumper Crop











The garden in Dundas is producing an amazing amount of veg so far. Dinning on lettuces and onion tops is the norm these days, not only at home but at the butcher shop as well. Just a few pics to show the progress from only a week or so ago.

Berks and Wags












It was a perfectly porky day last week, with a hint of superb beef thrown in for good measure.
Not everyone gets to see these two nearly perfect meat products, but since you visit this blog on a regular(somewhat?)basis you're now privy to some sneak peaks at a half of a Berkshire pig and the first cut of our own Wagyu beef. The pork is raised in Georgian Bay while the beef has been brought to an astounding 1100lbs + on our farms in Jarvis, ON.
Each bring a 'top game' feel to the table. Forget what you've ate in the past, these animals are beyond comparison.

Garden of eatin


Turns out that tilling the land, working in some manure, and planting some seeds will provide some damn tasty lettuce.
Just the beginning stages of the Dundas garden has proven to be a success. Just last night we dined on Berkshire pork chops, a nice red from Wayne Gretzky, and a salad made of freshly picked lettuce from the garden. It's something special to nurture a plant, water it and then eat it.
Hell, maybe the next step is livestock? Maybe not.

Essex County Food Map

Being a home boy from the Essex County area I thought that this was one of the best things I've seen happen to the area in the last few years.
While dining on some great burgers last night I was told that this map had just been rolled off the presses and that a copy was secured for my viewing enjoyment.
Gotta say, although it's not perfect and could use some more farmers to jump on board, it is a great start for an area that has become so removed in the equation of food and consumer.
It may be a criticism from a butcher, but to you farmers raising quality meats; get on board with this, it can only help you and the area.
